This is a junk food page, after all. Who doesn’t love a greasy, salty snack every now and then?
These make perfect nuggets for the kiddos, but grown ups won’t be able to help themselves, either!
This recipe calls for about 1lb of meat replacement. I use my Chik’n Seitan (1/4 of the batch), but you can use tofu, store bought Seitan, or even cauliflower.
Vegan Fried Chik’n
Begin by getting 2 bowls, and in the first mix:
- 2 cups white flour
- 2T Penzey’s buttermilk ranch dressing base (substitute 2T poultry seasoning, 1t pepper, and 1t salt if necessary)
In second bowl, mix:
- 3T yellow mustard
- 1/2 cup water
Take 1/3 cup of the flour mix and add it to the mustard. Then, add to the flour:
- 2T baking powder
Cube your meat replacement into bite size pieces, while you heat in a pan:
- 3 cups canola, vegetable shortening, or other frying oil
Start by coating each piece in the mustard liquid, then toss in dry flour mixture. Add to hot oil and fry until golden brown, being careful not to crowd the pan. Serve with your favorite comfort foods, or try some homemade vegan bbq sauce!
