I needed aquafaba (the liquid from a can of white beans) for a different recipe, so I needed to use up the beans. Quick, easy, and spicy- this chili is sure to warm you up on a cold day.
Ingredients:
- 1 can white beans (drained)
- 2 cups water
- Chopped yellow pepper
- Hand full of fresh spinach
- 2 T Olive oil
- 1 t garlic powder
- 1 T cumin
- 1/2 t turmeric
- 1 t salt
- 1 T smoked paprika
- 1 t cayaenne
Combine in a sauce pan and cook until veggies are soft, about 5-7 minutes. Makes 2 bowls.
Garnish with cilantro, fresh lime, or shredded vegan cheese.
