For the Corned Tofu
Combine in croc pot on low:
- 1 block extra firm tofu
- 3T canning spices
- 2T sugar
- 3T salt
- 3T Apple cider vinegar
- 1 cinnamon stick
- 1T black peppercorns
- 1 cup red cabbage, in large chunks
- 4 cups water (or enough to just cover tofu)
Cook on low for 2-3 hours, until flavor is absorbed.
Russian Dressing
- 4T vegan Mayo
- 1T ketchup
- 1t hot sauce
Combine in small dish, set aside for sandwich.
Vegan Reuben
- Sliced corned tofu & cooked red cabbage
- Russian dressing
- 2 slices rye bread
- Vegan butter
- Sauerkraut
To assemble sandwich, begin by buttering the slices of bread. Spread Russian dressing on the inside of both slices, then layer sauerkraut, tofu, and cabbage inside. Grill until both sides of bread are golden brown and toasty. Enjoy!
