The Perfect Chocolate Chip Cookie
Preheat oven to 375 degrees F
- 2 softened vegan buttery sticks (about 1 cup) Don’t use tub spread, the water content is too high.
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 T vanilla extract
- 2 flax eggs (2T ground flax and 8T water, let sit 3-5 mins)
- 1 t baking soda
- 1/2 t salt
- 2 cups flour
Mix well, until soft dough forms. Then, gently fold in:
- 2 cups vegan chocolate chips (we love Kirkland signature from Costco!)
Grease cookie pan. Roll dough into balls, about 2T dough each. Place spaced apart on pan, giving room for cookie to spread. Bake 12-13 mins, until edges brown. Enjoy warm or cool!
