Basic Vegan Muffins- Lemon Blueberry and Orange Marmalade

This muffin base is great to top with whatever you’d like! You can even divide them up and make a few flavors. I made Lemon Blueberry and Orange Marmalade.

Basic Vegan Muffin

Preheat oven to 400 degrees F.

Mix dry and wet ingredients in separate bowls, then combine:

  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 cup soy milk, or any plant milk
  • 1 tsp vanilla extract
  • 1/4 cup applesauce
  • 1/4 cup canola or vegetable oil

For Lemon Blueberry, add:

  • Juice and zest of one lemon
  • 1/2 cup Fresh blueberries for batter, and more to top

For Orange Marmalade, add:

  • 2/3 cup orange marmalade (be sure your Marmalade uses pectin and not gelatin)

Fill greased muffin cups 2/3 full. Top with remaining berries (if using berries) and place in oven. Turn oven down to 350 degrees F, then bake 26-30 minutes.
