I used to love the sweetness and crunch of the classic chicken Waldorf salad. This vegan twist is just as tasty, with none of the animals!
Cannellini Waldorf Salad
- 1 can cannellini beans
- 1 chopped apple
- 1/2 cup red grapes, cut in half
- 1 finely chopped stalk celery
- 1/4 cup pecan halves
- 1/4 cup vegan mayonnaise
- (Opt) shredded carrot
- (Opt) shredded red cabbage
Serve over salad greens, on a sandwich, or eat with a spoon over your sink. We won’t judge.
