Sunken Brownie Treasures

Moist, fudgy, chocolate treats that kind of remind me of those store bought packaged brownies. There’s only one difference- these are homemade, with none of the icky preservatives and chemicals. Try them topped with a dollop of my Velvet Vegan Chocolate Buttercream Frosting for a heavenly treat!

Sunken Brownie Treasures

Preheat oven to 350 degrees F.

Add to a blender:

  • One can black beans, drained and rinsed well
  • 1/3 cup cocoa powder
  • 1/3 cup coconut oil
  • 1/3 cup flour
  • 1/3 cup sugar
  • 1/3 cup soy milk
  • 1/3 cup water
  • 1 Tbsp baking powder

Blend ingredients until they form a smooth batter, scraping sides down as needed.
Fill muffin cups with 1/3 batter (this recipe is designed to minimize dishes, can you tell?). Bake at 350 for 22 minutes. Brownies will still be pretty moist in the middle until they cool and firm up. These do not require a toothpick to be inserted and come out clean! You want that fudge in the center. As they cool, the centers will sink, giving you the perfect place to glop some Velvet Vegan Chocolate Buttercream Frosting, fresh fruit, or Vegan Vanilla Buttercream!
