This no-bake recipe comes together with just a crust and 4 ingredients! I’m not a huge fan of hunting down raw cashews, soaking then overnight, and dealing with the extra headache. This recipe uses unsalted, roasted cashews that you can find just about anywhere. I use a premade crust in this quick, easy recipe, but you can make your own if you’d like!
“Fool Your Friends” Vegan Cheesecake
Toss into a high speed blender, smoothie blender, or food processor:
- 1 cup unsalted cashews
- 1 can mango nectar
- 1/4-1/2 cup agave, depending on desired sweetness. I use 1/4 cup.
Blend until smooth, pulsing as needed and scraping sides. Slowly add:
- 1 cup melted coconut oil
Continue blending until very smooth and creamy, at least 2 minutes. This will depend on your blender. When mixture resembles a thick milk, pour into a graham crust and allow to set up in the fridge at least 6 hours. Slice and serve with your favorite topping! I used my vegan caramel sauce, some chocolate syrup, and fresh raspberries.
