Vegan Waffles

Are they breakfast, or are they dessert? I guess, it’s all in the way you imagine them. Perfect under a scoop of vegan Ben & Jerry’s, or smothered in syrup, these fresh, crisp waffles take just 5 minutes to whip up!

Vegan Waffles

Start by making flax eggs by mixing:

  • 2 Tbsp ground flax
  • 1/4 cup water

Allow to sit a couple minutes, while you cream together in a separate bowl:

  • 1 cup sugar (can use coconut sugar, the results will be sightly more golden)
  • 1/4 cup coconut oil

Add:

  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1/2 tsp cinnamon (for even more flavor, try Penzey’s Pie Spice)
  • 1/2 cup soy (or any plant) milk
  • 1 cup flour

And finally, add your flax eggs. Mix until a thick batter forms.

Scoop onto preheated waffle iron and cook until golden brown, approx 3 minutes. Serve with you favorite topping. I like vegan caramel sauce, chocolate syrup, raspberries, and almonds for a decadent treat!
