One Pot Hearty Quinoa Lentil Pilaf
In a large stock pot with lid, combine:
- 6 cups water
- 1 cup red quinoa
- 1 cup green lentils
- 2 Tbsp Better Than Bouillon No-beef base
- 1 chopped carrot
- 2 chopped stalks of celery
Bring to a boil, cover and turn down heat. Simmer about 20 minutes, until most of the liquid is absorbed. This may take more or less time, depending on stove. Turn off heat and let sit covered another 5 minutes before fluffing with fork. Serve immediately, or refrigerate overnight for a cold salad. If desired, garnish with:
