Rainbows and unicorns are all the rage in my house.
This French toast oozes rainbows and melted unicorn horn (banana) for a fun twist on breakfast!
Unicorn Stuffed French Toast (vegan)
Preheat oven to 400 degrees. Line baking pan with parchment paper and spray with non stick oil. Combine in a medium sized mixing bowl:
- 3 Tbsp ground flax seeds
- 1 cup water
Allow to sit a few minutes, to create flax eggs. Mix well with a spoon, then add:
- 1/2 cup soy (or any plant) milk
- 1 tsp Penzey’s Pie Spice (substitute cinnamon)
Set aside and prepare French toast sandwiches:
- 6 slices of bread
Make 3 sandwiches by spreading on 3 of the slices:
- 3 Tbsp vegan buttercream icing (can substitute vegan cream cheese or peanut butter)
- 1 thin sliced banana
- A few vegan sprinkles on each
Place the other 3 slices of bread on top. Carefully dip each “sandwich” into flax liquid, and place on baking dish. Bake 24 minutes, carefully flipping with a spatula halfway through.
Slice each into 4 French toast sticks, and dust with powdered sugar and more sprinkles. Enjoy while it’s still warm and gooey!!
